Are you a Tori/ Turai (Ridge Gourd) Fan? I guess, that’s one vegetable which many hate and a very few love. It’s a low -calorie vegetable containing many vitamins and minerals. Mostly available in summers because of its high water content. We as a family love this veggie. It’s simple, very light yet full of goodness 💓 Naturally sweet in taste and when you cook it with tomatoes and onions the flavors get enhanced.
There are many ways of making it but I like the way my MIL prepares it. I am sharing the recipe for anyone who would like to give it a try 💓
Wash, peel and cut Ridge Gourd into small round pieces.Take 2 big tomatoes and grind it into puree. Now chop 1 onion and green chilli. In a pressure cooker take ghee ( yes , don’t use oil here) Add the tomato puree and let it cook for a few minutes, now add the chopped onion and green chilli, add salt, turmeric powder, little chilli powder and further cook it for 2-3 min. Add your chopped Tori in it, mix everything and add very little water. Pressure cook it for 10 min and yipeee it’s done! Add little lemon juice before serving it if you like💓
