Chickpeas salad

Once a week mostly on Thursdays me and husband “only salad”and fruit day. I make something extra for the girls though. It helps us to detoxify and I get a break too from the usual cooking.

This simple and refreshing chickpeas salad is protein packed and so flavourful. Serve it cold and I bet you can’t stop at one serving ๐Ÿ˜‹ Along with veggies, I also added some crumbled home made cottage cheese, grapes and chia seeds here. Crunchy, delicious and so good in this hot weather.

Sharing the recipe below:

๐ŸŒฟ Soak 1 cup chickpeas overnight. In the morning, boil chickpeas for about 25 minutes and let the pressure release naturally.

๐ŸŒฟMeanwhile, chop your veggies/ fruits, I used cherry tomatoes, yellow bell pepper, cucumber, pomegranate, grapes, crumbled cottage cheese and fresh corriander leaves.

For salad dressing- Mix the below ingredients:

2 tbsp Date syrup, 2 tsp lemon juice, 2 tsp chaat masala, 2 tsp mint powder, 1.5 tsp salt, 1.5 tsp black pepper, 1.5 tsp cumin powder, 1.5 tsp oregano.

Mix everything together, garnish with fresh corriander leaves and chia seeds. Enjoy!
