Remember the birthday cake I made for Mr. A. While the cake disappeared in 2 days. I was left with 1.5 cups of mango butter cream frosting. Credit to my inexperience, I had no idea about the quantities 🙈 I freezed the frosting though, and then thought about various ways to effectively use it and finally decided to make cookies out of them 😅 So you can call them as Mango Butter Cream cookies 😬
I added whole wheat flour, oats, vanilla essence and a pinch of baking soda to my frosting and kneaded a tight dough. (Swipe left to see images) Didn’t add any further sweatner as frosting already had enough . Baked them for about 15 min and you have these very moist, delicious & chewy cookies 👆Shape is not perfect as I was not sure about the outcome but to my surprise they came out really well. Definitely motivated to keep my baking game going 😅
These are perfect for those after meal sugar cravings or as tea time snacks.
So if you have any leftover cake frosting , go ahead and make some cookies 🤗
