Saying hello to Delhi Summers with this comforting bowl of Curd Rice. With the increase in temperature and a very active moving baby I am keeping my meals light, easy and quick.
This super delicious curd rice was our lunch today along with a bowl of watermelon.
Sharing my version below, if you wish to try 💕
🌿Prepare simple rice. Add little salt and ghee while boiling them. Once they are done, let them cool down. Add curd to it. Preferably home made.
🌿Thereafter add salt, cumin powder, black pepper and fresh corriander leaves.
🌿Take 1/2 tsp of olive oil. Once it’s hot, add mustard seeds, let them crackle, then add curry leaves, roasted chana dal, few peanuts and cashews. Roast them well till they become crunchy. Add this tadka to your curd rice.
🌿Top it with some pomegranate arils. I added some green chillies to mine. Serve cold and enjoy 💕
