Friday’s are for this Desi Pasta and Garlic Bread! Prepared it few weekends back and planning to make it again tonight for our dinner!
A very Desi kind of a pasta very similar to how I make my Macroni but this one has fresh basil along with other veggies. No cheese but you will fall in love with the taste and aroma.
The garlic bread ofcourse has some cheese, chopped fresh basil,corriander leaves, garlic, butter with oregano and red chilli flakes!
Overall a very delightful meal if you love Italian with some Indian twist 😀

Recipe of Pasta-
Boil 2 cups of pasta along with water , little oil and some salt. Don’t throw the pasta water. Chop veggies of your choice, I used green, yellow bell peppers and mushrooms here. Clean and wash 1 cup of fresh basil leaves. Chop some ginger and garlic and make a coarse paste using your mortal
pearle. Also, chop 2 onions and 3 red tomotoes.
In a wok, take some oil and butter, once it’s hot add your ginger garlic paste, then add chopped onions. Cook at low heat till onions become soft and then add tomatoes. Cover the wok and let it cook for 15 min till it becomes mushy and tomatoes are well cooked. Then add some salt, black pepper, little garam masala, red chilli powder, tomato ketchup. Mix everything and then add few basil leaves (not all) Cover it for 5 min. Then add your veggies and 1/2 cup of pasta water. Mix everything and then add remaining basil leaves along with boiled pasta. Check your spices at this level. Cover for 5 min again and cook till all the water disappears and pasta gets coated with all the masalas and veggies. Serve hot. You may add some cheese and Italian seasoning while serving!
