Kesar Badam ki Kheer ( Saffron Almond Kheer) as prasad for Maha Shivratri today. My Mom makes this Kheer every year on this day. Talking to her on phone yesterday reminded me of this Kheer and the sheer nostalgia of childhood! As kids, Shivratri always meant school holiday, buying Ber fruit, flowers, milk and accompanying mom to temple. Ofcourse, the high point used to be this kheer along with vrat ka khana. I didn’t fast today but prepared this kheer along with Chole Puri. Little A’s favorite.
About the Kheer- Full fat milk slowly cooked with few saffron strands here. Mixed with almond paste prepared by grinding around 50 peeled almonds (soaked overnight) into a paste (no other nuts here just pure almonds) flavored with cardamom powder and sweetned with coconut sugar I also added a spoon of rice while cooking to get a good thick consistency. Garnished with dry rose petals, blanched almonds and some pistachios. Needles to say, it tasted divine 😋 Would love to know if you try this version 😊
