Mint flavoured roasted Makhana / Pudhina Makhana

There’s no denying that fox nuts/ Lotus seeds are powerhouse of nutrients and antioxidants. They are an ideal snack option for school lunch box or to munch during tea time.

Made a big batch of these mint makhanas πŸ‘† They are flavourful, tangy, crispy and so delicious. Much better than the packaged ones with no preservatives or extra salts. Very simple and easy to make at home.

You can either use home made dry mint powder or store bought mint powder. I finished my home made stock so I have used the store bought mint powder here. Sharing my recipe below, make it soon πŸ’•

Recipe:

🌿In a heavy bottom wok or pan. Preferably an iron one, add tbsp of ghee/ butter/ olive oil. I would recommend using ghee. Heat it and add salt, 2 tbsp chaat masala and 3 tbsp good quality mint powder at low flame . Mix everything well.

🌿 Add 100 gm of Makhana and coat them well with all the spices. Always add Makhanas into the mixture of ghee and spices and not the other way round so that the makhanas are coated well with all the spices. At low flame, roast the makhanas till they are crispy enough. This will take 10- 15 minutes. Keep on stirring else they will burn. Taste and add salt/ chaat masala/ mint powder if required.

🌿 Switch off the flame and let them cool down.

🌿 Store in an airtight container . They stay well upto 20-25 days. Enjoy your munchies πŸ’•
