Paneer Jalfrezi- For all the paneer lovers!
An easy, delicious and semi -dry dish with paneer and other vegetables. I used bell peppers, corns, and carrots here. You can add other veggies too as per your choice. Sharing a quick recipe below-
Chop 1 big onion, bell peppers, carrots, green chillies. Thaw 1/2 cup of corns if you are using frozen ones. Make puree from 2 big tomatoes. Make a paste of ginger and garlic in a mortar-pestle. Cut paneer into long cubes. In a wok, add some oil, and ginger garlic paste and green chillies. Cook at a low heat for about 2 min. Add chopped onion, saute it till they are soft, now add all the veggies, salt, turmeric powder, red chilli powder as per your taste. Cover the wok till the veggies become slightly soft. Then add tomato puree, let it cook till the raw taste of tomatoes goes away. Now add coriander powder, garam masala, black -pepper and little ketchup (optional) . Add paneer cubes. Mix everything well, cover the wok again for 3-4 min.. Garnish it with lots of fresh coriander leaves and serve hot with parathas.
