Rice kheer with Jaggery/ Gud wali chawal ki kheer

We started the first day of the week with this rich creamy bowl of rice kheer. Specially made for the second grader at home who started her offline school yesterday! She loves a good bowl of chilled kheer just like her Mom ๐Ÿ˜€

Made with full fat milk, idli rice and sweetned with jaggery powder. Garnished with almonds, pista. Flavoured with crushed cardamom and few drops of kewda essence! Aromatic and delicious ๐Ÿ’• Sharing my recipe below if you wish to try-

๐ŸŒฟTake 1 litre full fat milk, boil it in heavy bottom pan and slow cook at low flame. Stir in between. This takes about 45 minutes- 1 hour.
๐ŸŒฟ Wash and soak 1/2 cup of rice in water for 10 minutes and add it into milk. I have used idli rice here and it works well in the kheer. Else, you can use govind bhog or basmati variety.
๐ŸŒฟ Take 3/4 cup of powdered jaggery. You can use grinder to make it into a powdered form
๐ŸŒฟ Once the milk is reduced well and rice is cooked. Switch off the flame. Once it’s cooled down. Add powdered jaggery, crushed cardamom and few drops of kewda essence. Mix everything well.
๐ŸŒฟ At a low flame, slightly heat the kheer for 5-7 minutes so that all ingredients are mixed well. Do not heat the kheer much at this point.
๐ŸŒฟ Take 1/2 tsp of ghee and roast nuts till they are crispy . I have used almonds and pista. Add this to your kheer along with few dry rose petals.
๐ŸŒฟRefregerate the kheer and serve once chilled. Enjoy!
