Tomato and Beetroot Rice!
Spicy tomato rice is particularly famous across South India and finds its way into every south indian thali, served alongside myraid of other delicious dishes. Reminds me of our good old Kochi Days. Here, I have added beetroot as well to balance the heat of spices and to have that pretty color (Ofcourse, the underlying reason being to utilise around a kg of betroots that my husband bought during his weekly vegetable shopping 😑). Also, it’s a perfect one pot rice meal that can be prepared under 30 min for lunch/ dinner on busy days. Very delicious and different from normal pulao / biryani!
I served these rice with lobia salad, boondi raita and some white rice papad, the kind we used to relish during our picnic to India Gate when we were kids 😅. I so love these papads!
