I love making different varieties of mix veg and Vegetable Jalfrezi is an absolute favourite. A very flavourful , tangy sabzi that you can easily prepare for lunch/dinner. It pairs well with roti/ paratha/ naan. I sometimes make it extra to use it as a filling for my sandwiches and rolls as well.
I am sharing a very easy and simple version of veg Jalfrezi. The only time that you will spend is in prepping the veggies because cooking it doesn’t take much time. Try and let me know if you liked it 🤗
🌿Prep your veggies – I used 5 baby corns, 2 bell-peppers, 1/2 cup sweet corn, 1 big carrot, 8 french beans.Chop them length wise. Boil sweet corns seperately. I also added few paneer cubes.
🌿 Chop 2 onions and 3 juicy big tomatoes.Tomatoes here give a good flavour and colour so use the best ones. Also, chop 3-4 garlic cloves, 2 inch ginger and 1-2 green chillies.
🌿 Take a heavy bottom wok preferably an iron cast pan. Add 1/2 tbsp oil+ 1/2 tbsp butter and stir fry your veggies except paneer.Keep the flame high and stir fry it for around 7-10 min till they become crunchy.
🌿 In another pan, add 1 tsp oil. When it’s hot add chopped ginger and garlic, green chillies and then onions. Add salt. Saute it for 5 min at low flame and then add tomotoes. Cover the pan so that tomatoes become mushy. This will take 10 min. Add red chilli powder, turmeric powder, 1 tsp vinegar and 2 tbsp ketchup, 1 tsp brown sugar. Add stir fried veggies and paneer cubes. Mix everything well. Cover the pan for 2-3 min.
🌿 Check salt and add just a pinch of garm masala. Use ketchup and vinegar as per your taste. Garnish your sabji with lot of corriander leaves and Sesame seeds. Serve hot and enjoy with bread of your choice.
