Vegetable pulao – loaded with all the veggies and paneer. Has aroma of whole spices, garam masala , fresh corriander and mint leaves! The best part is it has goodness of ghee! Makes for a good weekend lunch.
Served with sweet beetroot boondi raita, green chilli pickle and microwave roasted rice papad. Absolute bliss 💕
Sharing the recipe of my vegetable pulao, try this, you will love it 💕
🌿Wash & Soak 1+1/4 cup of basmati rice in water.
🌿Prep your veggies – I used half cup of chopped cauliflower, carrots, beans, capsicum, peeled peas and around 125 gms paneer. Also, chop 2 tbsp each of fresh mint leaves and corriander leaves.
🌿Chop 2 onions, 3 tomatoes,1 inch ginger and 1-2 green chillies.
🌿 In a wok, take 1 tbsp ghee, add 1 tsp jeera, 1 big Bay leaf, 1 small cinnamon stick, 1 crushed black cardamom, 2-3 cloves, 4-5 chopped cashews. Stir at low flame and let the whole spices become fragrant. Now add chopped ginger, green chillies, onions,1 tsp salt, cook till they become slightly brown and then add chopped tomatoes . Saute them till the tomatoes become slightly mushy. Add all vegetables except paneer. Add garam masala, achari masala, turmeric powder, red chilli powder as per your taste and 1 tsp brown sugar. Stir everything at low flame for about 10-15 minutes till veggies become little soft.
🌿 Now add chopped coriander and mint leaves.
🌿Add little ghee again and salt at this point.
🌿 Now add soaked rice without water and paneer.Mix everything well
🌿 Add 2 cups + 1/4cups water . Check for salt or spices at this level.
🌿 Give 1 boil and cook at low flame. It will take approximately 10-15 minutes
🌿Once done, drizzle some ghee over it and serve with raita/ papad and achar. Enjoy! 💕
