βœ”οΈWeekend Baking – Eggless Marble Cake. A mixture of vanilla and chocolate flavour. That turned out Super delicious with the perfect soft texture. Great as a dessert treat for kids and tea time snacks for adults. Sharing my easy recipe below that I evolved over two attempts and got good results. The best part is you don’t need to prepare seperate batters. I make my basic vanilla recipe and then divide into two, and add cocoa and coffee powder to one part. ‘Bake it to know it’, will love to hear your feedback πŸ€—

🍰1+1/2 cup APF
🍰1 cup curd ( At room temperature)
🍰3/4 cup castor sugar (powdered sugar)
🍰1+1/4 tsp baking powder
🍰1/2 tsp baking soda
🍰1/2 cup oil
🍰 1 tsp french vanilla essence
🍰 2 tbsp cocoa powder
🍰 1 tsp coffee powder
🍰 1 tsp Belgian chocolate essence (optional)

Method –
1. Sift APF flour, baking powder and baking soda together.
2. Combine sugar and curd in another bowl till sugar dissolves completely. Please make sure that curd is at room temperature.
3. Add oil and vanilla essence to the curd mixture. Mix everything well together.
4. Add dry ingredients to your wet ingredients to get a smooth batter. Beat in one direction and do not over mix.
5. Divide your batter into half.
6. Add cocoa powder, coffee powder and chocolate essence into one and mix it well. You can also add melted chocolate here if you wish. I didn’t add in this.
7.Grease your cake tin with oil/ butter .
8. Preheat oven at 180 degrees for 10 min
9. First pour your vanilla batter into the tin, then pour your chocolate batter. Finally cover the chocolate batter with vanilla batter again.
10. Bake at 180 degrees for 40 minutes or since temperature varies in different ovens keep a check after 35 minutes. Insert a toothpick in the centre , it should comes out clean.
11. Let the cake cool down completely, unmould it. Cut , serve and enjoy!
